Hugo Spritz recipe 2026 — with organic elderflower syrup

The Hugo Spritz has become the most popular summer cocktail in Europe in 2026. Originally from South Tyrol, now found on every terrace from Amsterdam to Zagreb. The secret? Elderflower syrup. That floral, lightly sweet flavour that envelops prosecco and sparkling water and makes it something special.

We make our elderflower syrup from wild elder growing in the forests and along the streams of the Croatian Zagorje and Gorski Kotar. No greenhouses, no cultivated bushes — only wild plants growing in the most aromatic locations. You can taste the difference.

The classic Hugo Spritz recipe

  • 30 ml organic elderflower syrup (Agropošta)
  • 120 ml prosecco (well chilled)
  • 30 ml sparkling water (or more to taste)
  • 2–3 sprigs fresh mint
  • 1–2 slices lime
  • Ice cubes

Method: Fill the glass with ice cubes. Add the mint and lime. Pour in the elderflower syrup, then the prosecco and finally the sparkling water. Stir gently to preserve the carbonation. Garnish with an extra sprig of mint.

Why elderflower syrup instead of elderflower liqueur?

Many recipes use St-Germain or another elderflower liqueur. These contain alcohol (20% ABV) and are considerably more expensive. With a good elderflower syrup you make a Hugo Spritz that is just as aromatic — but without extra alcohol, and at a fraction of the price.
