We do this at the moment when the bud of the plant becomes a flower, because that is precisely when there is the most fragrance and flavour.

Use the sage syrup as a base for a Gin-Tonic with sage, a Mimosa with grapefruit, or a simple sage lemonade. The herbal taste of sage combines surprisingly well with gin, champagne and citrus.
